Creamy Tomato Basil Soup

  • Ingredients:
    • 2 tbsp olive oil
    • 1 large onion, chopped
    • 2 garlic cloves, minced
    • 2 cans diced tomatoes
    • 2 cups vegetable broth
    • 1 cup heavy cream
    • 1/4 cup chopped fresh basil
    • Salt and pepper
  • Directions:
    1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
    2. Add diced tomatoes (undrained) and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 15 minutes.
    3. Remove pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and puree in batches.
    4. Return the soup to the pot and stir in heavy cream and chopped basil. Season with salt and pepper to taste.
    5. Serve hot with a crusty bread.
