Creamy Tomato Basil Soup
- Ingredients:
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 cans diced tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1/4 cup chopped fresh basil
- Salt and pepper
- Directions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add diced tomatoes (undrained) and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Remove pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and puree in batches.
- Return the soup to the pot and stir in heavy cream and chopped basil. Season with salt and pepper to taste.
- Serve hot with a crusty bread.
